  • I requested a copy of Diabetes Superfoods in exchange for this review. I went into it thinking it would be like most cookbooks geared towards diabetics--bland and boring and I found it is anything but. When I first sat down and started flipping through the pages I was only 1/4 of the way through and had flagged to try more than two dozen recipes.

    First of all, the Superfoods referred to in this book are things all of us should be eating on a daily basis, making this cookbook good for everyone in the family whether they have diabetes or not.

    Fish High in Omega-3 Fatty Acids.
    Healthy Fats.
    Lean Protein
    Legumes
    Low-fat Milk and Yogurt
    Sweet Potatoes
    Tomatoes
    Whole Grains

    The book itself is easy to navigate and most recipes require less than 10 ingredients and out of those 10, many are pantry staples. The recipes are clear and concise and can be easily followed by the home cook regardless of their skill level.

    The back of the book is where you will find the best part--40 days of meal plans (8 weeks/5 complete days each). Each daily meal plan includes at least two Superfood recipes, balanced meals, and snacks. Weekly plans are designed in such a way that ingredients can be used multiple times (keeping grocery trips to a minimum) and you will have leftovers to enjoy as well.

    I highly recommend this book to anyone who is either already eating healthy, looking to get healthy or needing a plan to get them started. I will update this review in June after I've completed all 8 weeks of meal plans.
